Our Spring Meat CSA is 4 meat share pickups or 8 egg share pickups beginning in mid-February and ending in early-May. Each meat share is composed of frozen cuts from beef, pork, or lamb raised here on our farm and the egg shares are fresh eggs from our free-ranging, pastured hens. You can choose any combination of the different shares below and buy multiple shares if you would like. The pickup locations are here on the farm, at the Horn Farm Center in York County, or at our Mulberry Street drop-off point in Lancaster City. MONTHLY MEAT SHARES LARGE LAMB SHARE - $215 - 20+ lbs of lamb (5 lbs per pickup) - A full lamb share will be a mixture of ground lamb, lots of different lamb chops, shanks, leg of lamb, and shoulder roasts. SMALL LAMB SHARE - $140 - 12 lbs of lamb (3 lbs per pickup) - A half lamb share will be a pound of ground lamb, a few types of lamb chops, a leg of lamb, and a few roasts. MUTTON SHARE - $150 - 16 lbs of mutton (4 lbs per pickup) - A mutton share will be a leg roast, shoulder roast, a rack, few pounds of ground mutton, shanks, stew meat, and chops. Mutton is meat from sheep that is over 2 years old (some designate it over 1 year old) and the main difference between mutton and lamb is that it is more flavorful and a little less tender. Therefore, the mutton share will be primarily roasts and ground (low and slow cooking) whereas the lamb shares have more chops that can be cooked minimally and still be tender. We love our mutton and think it is quite mild and tender for the age. BONES ADD-ON - $20 - 5 lbs of bones ORGANS ADD-ON $20 - 4 lbs of lamb organs
LARGE PORK SHARE - $195 - 24+ lbs of pork (6 lbs per pickup)The share will be approximately 4 lbs of pork chops, 6 lbs of roasts, 4 lbs of no-nitrate smoked bacon, 3 lbs of sausage, and 7 lbs of other cuts (ribs, hocks, etc)! SMALL PORK SHARE - $140 - 16 lbs of pork (4 lbs per pickup)The share will be approximately 3 lbs of pork chops, 4 lbs of roasts, 2 lbs of no-nitrate smoked bacon, 2 lbs of sausage, and 5 lbs of other cuts (ribs, hocks, etc)! SAUSAGE SHARE - $60 - 8 lbs of sausage (2 lbs per pickup) Each pickup you can choose between country, chorizo, sage, hot italian, sweet italian, and breakfast maple sausage. PORK BONE ADD-ON - $15 - 5 lbs of bones PORK FAT ADD-ON - $12 - 6 lbs of fat and leaf lard PORK ODDS AND ENDS - $20 - 6 lbs of organs, jowl, trotters, and the like (the most nutritious bits!)
BEEF SHARE - $195 - 20+ lbs of beef (5 lbs per pickup) The share will be approximately 4 lbs of steaks, 7 lbs of roasts, 6 lbs of ground beef, 1 lb of beef cubes and 2 lbs of soup bones. GROUND BEEF SHARE - $85 - 12 lbs of ground beef (3 lbs per pickup) BEEF BONE ADD-ON $20 - 6 lbs of bones and marrow bones BEEF FAT ADD-ON $10 - 5 lbs of beef fat (make your own grass-fed tallow!)

BI-WEEKLY EGG SHARES (Beginning March 10) FULL SHARE - $60 - 2 dozen eggs every 2 weeks (12 dozen total) HALF SHARE - $30 - 1 dozen eggs every 2 weeks (6 dozen total)

PAYMENT All CSA shares can be paid by check/cash to RISING LOCUST FARM at the first pickup date or by sending a check in the mail to RISING LOCUST FARM at 1339 Creek Road, Manheim, PA 17545. Payment plans can be arranged per request as well! Thanks for your support!
