Our Fall Meat CSA is 3 share pickups beginning in mid-November and ending in mid-January. Each share is composed of frozen cuts from beef, pork, or lamb raised here on our farm. You can choose any combination of the different shares below and buy multiple shares if you would like. The pickup locations are here on the farm, at the Horn Farm Center in York County, at Dillsburg Yoga, or at our Mulberry Street drop-off point in Lancaster City. MONTHLY MEAT SHARES FULL LAMB SHARE - $175 - 15+ lbs of lamb (5 lbs per share) - A full lamb share will be a few pounds of ground lamb, lots of different lamb chops, shanks, a lamb roast or two, and a leg of lamb. HALF LAMB SHARE - $105 - 9 lbs of lamb (3 lbs per share) - A half lamb share will be a pound of ground lamb, a few types of lamb chops, a leg of lamb, a lamb roast, and a shank. MUTTON SHARE - $115 - 12 lbs of mutton (4 lbs per share) - A mutton share will be a leg roast, another roast, a few pounds of ground mutton, shanks, and a few chops. Mutton is meat from sheep that is over 2 years old (some designate it over 1 year old) and the main difference between mutton and lamb is that it is more flavorful and a little less tender. Therefore, the mutton share will be primarily roasts and ground (low and slow cooking) whereas the lamb shares have more chops that can be cooked minimally and still be tender. We love our mutton and think it is quite mild and tender for the age. BONES ADD-ON - $20 - 5 lbs of bones ORGANS ADD-ON $20 - 4 lbs of lamb organs
FULL PORK SHARE - $130 - 15+ lbs of pork (5 lbs per share)The share will be approximately 3 lbs of pork chops, 3 lbs of roasts, 2 lbs of no-nitrate smoked bacon, 3 lbs of sausage, and 4 lbs of other cuts (ribs, tenderloin, etc)! HALF PORK SHARE - $80 - 9 lbs of pork (3 lbs per share)The share will be approximately 2 lbs of pork chops, 2 lbs of roasts, 1 lbs of no-nitrate smoked bacon, 2 lbs of sausage, and 2 lbs of other cuts (ribs and tenderloin)! SAUSAGE SHARE - $65 - 9 lbs of sausage (3 lbs per share) Each pickup you can choose between country, chorizo, sage, hot italian, sweet italian, and breakfast maple sausage. PORK BONE ADD-ON - $15 - 5 lbs of bones PORK FAT ADD-ON - $12 - 6 lbs of fat and leaf lard PORK ODDS AND ENDS - $20 - 6 lbs of organs, jowl, trotters, and the like
FULL BEEF SHARE - $130 - 15+ lbs of beef (5 lbs per share) The share will be approximately 2 lbs of steaks, 3 lbs of roasts, 8 lbs of ground beef, 1 lb of beef cubes and 1 lbs of soup bones. GROUND BEEF SHARE - $65 - 9 lbs of ground beef (3 lbs per share) BEEF BONE ADD-ON $20 - 6 lbs of bones and marrow bones BEEF FAT ADD-ON $10 - 5 lbs of beef fat (make your own tallow!)

PAYMENT All CSA shares can be paid by check/cash to RISING LOCUST FARM at the first pickup date or by sending a check in the mail to RISING LOCUST FARM at 1339 Creek Road, Manheim, PA 17545. Payment plans can be arranged per request as well! Thanks for your support!
